- 1 large egg white (beaten)
- 1 large egg white for brushing
- 1 1/2 tablespoon sea salt or Everything Bagel seasoning
- 1 tablespoon butter
- 1/4 cup heavy cream
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine mozzarella and cream cheese in a microwave-safe bowl. Heat in 30-second intervals until melted and smooth.
- In a separate bowl, mix almond flour and baking powder.
- Add almond flour mixture, whole egg, and beaten egg white to the cheese mixture. Mix quickly to form a dough.
- Let the dough rest for 5 minutes, then knead until smooth. Add more almond flour if too sticky.
- Divide dough into 4 portions, roll into ropes, and cut into 1-inch pieces.
- Place bites on baking sheet, brush with egg white, and sprinkle with seasoning.
- Bake for 12-15 minutes until golden brown. Broil for an extra minute for crispiness if desired.
- For the cheese sauce, melt butter in a saucepan, add cream, and simmer gently.
- Add cheddar cheese gradually, stirring until smooth. Remove from heat.
- Serve pretzel bites with cheese sauce for dipping.
