  • 1 tablespoon baking powder
  • 2 teaspoons xanthan gum
  • 1 large egg
  • 1 large egg white (beaten)
  • 1 large egg white for brushing
  • 1 1/2 tablespoon sea salt or Everything Bagel seasoning
  • 1 tablespoon butter
  • 1/4 cup heavy cream
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine mozzarella and cream cheese in a microwave-safe bowl. Heat in 30-second intervals until melted and smooth.
  3. In a separate bowl, mix almond flour and baking powder.
  4. Add almond flour mixture, whole egg, and beaten egg white to the cheese mixture. Mix quickly to form a dough.
  5. Let the dough rest for 5 minutes, then knead until smooth. Add more almond flour if too sticky.
  6. Divide dough into 4 portions, roll into ropes, and cut into 1-inch pieces.
  7. Place bites on baking sheet, brush with egg white, and sprinkle with seasoning.
  8. Bake for 12-15 minutes until golden brown. Broil for an extra minute for crispiness if desired.
  9. For the cheese sauce, melt butter in a saucepan, add cream, and simmer gently.
  10. Add cheddar cheese gradually, stirring until smooth. Remove from heat.
  11. Serve pretzel bites with cheese sauce for dipping.
