Description

Keto Reuben in a Bowl is a delicious low-carb alternative to the classic Reuben sandwich.


Ingredients

  • 1 cup shredded cooked corned beef
  • 1 cup chopped green cabbage
  • 1/2 cup shredded Swiss cheese
  • 1/4 cup sugar-free Thousand Island dressing
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped green cabbage to the skillet and sauté for about 5 minutes, until it starts to soften.
  3. Add the shredded corned beef to the skillet and cook for an additional 3-4 minutes until heated through.
  4. Season the mixture with salt and pepper to taste.
  5. Remove the skillet from heat and sprinkle the shredded Swiss cheese on top, allowing it to melt.
  6. Drizzle the sugar-free Thousand Island dressing over the mixture and gently toss to combine.
  7. Add more seasoning if needed and garnish with chopped fresh parsley before serving.
