Keto Reuben in a Bowl is a delicious low-carb alternative to the classic Reuben sandwich.
Ingredients

- 1 cup shredded cooked corned beef
- 1 cup chopped green cabbage
- 1/2 cup shredded Swiss cheese
- 1/4 cup sugar-free Thousand Island dressing
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped green cabbage to the skillet and sauté for about 5 minutes, until it starts to soften.
- Add the shredded corned beef to the skillet and cook for an additional 3-4 minutes until heated through.
- Season the mixture with salt and pepper to taste.
- Remove the skillet from heat and sprinkle the shredded Swiss cheese on top, allowing it to melt.
- Drizzle the sugar-free Thousand Island dressing over the mixture and gently toss to combine.
- Add more seasoning if needed and garnish with chopped fresh parsley before serving.
