  • 1/3 cup coconut flour
  • 1/4 cup Swerve powdered sugar
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp cream of tartar
  • 1/2 tsp kosher salt
  • 1/2 cup coconut oil, melted
  • 1 tsp pure vanilla extract
  • 3 Tbsp unsweetened shredded coconut
  • 2 Tbsp granulated Swerve or monk fruit sweetener (optional)
  • 1 tsp ground cinnamon (optional)

Instructions

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, coconut flour, powdered Swerve, 1 1/2 tsp cinnamon, cream of tartar, and salt.
  3. Add melted coconut oil and vanilla extract to the dry ingredients. Stir until a soft dough forms. Fold in shredded coconut.
  4. If using the cinnamon coating, mix the optional granulated sweetener and cinnamon in a small bowl.
  5. Roll the dough into 12 balls (about 1 1/2 tablespoons each). Roll each ball in the cinnamon-sweetener mix if desired. Flatten each ball slightly onto the prepared baking sheet.
  6. Bake for 12–15 minutes, or until the edges are golden. Avoid overbaking.
  7. Cool the cookies on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • Store in an airtight container at room temperature for up to 5 days or refrigerate for longer shelf life.
  • If the dough is too dry or crumbly, add 1–2 teaspoons of water. If too wet, add a bit more almond flour.
  • Sweetener can be adjusted to taste or substituted with other keto-friendly options like erythritol or allulose.
