  • 1/2 cup sugar-free strawberry preserves
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, shredded coconut, chopped macadamia nuts, salt, and baking soda.
  3. In another bowl, whisk together the melted coconut oil, egg, vanilla extract, and sugar-free strawberry preserves until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Using a tablespoon, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Gently flatten each cookie slightly using the back of a spoon.
