- 1/2 cup unsweetened shredded coconut
- 1/2 cup macadamia nuts, chopped
- 1/2 cup sugar-free strawberry preserves
- 1/4 cup coconut oil, melted
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, shredded coconut, chopped macadamia nuts, salt, and baking soda.
- In another bowl, whisk together the melted coconut oil, egg, vanilla extract, and sugar-free strawberry preserves until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
- Using a tablespoon, drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each cookie slightly using the back of a spoon.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
