Description

Enjoy the crispy, savory goodness of traditional taquitos with a keto twist. These Keto Taquitos are filled with spiced chicken and cheese, all wrapped in a cheese-based tortilla for a low-carb option that satisfies Mexican food cravings.


Ingredients

  • 2 Tbsp. extra-virgin olive oil
  • 1/2 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 2 cups shredded chicken (rotisserie chicken works perfectly)
  • 2/3 cup red enchilada sauce (sugar-free if strict keto)
  • 4 Tbsp. freshly chopped cilantro, plus more for garnish
  • Kosher salt, to taste
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey jack cheese
  • 2 cups shredded mozzarella cheese (for the cheese tortillas)
  • Sour cream, for serving (optional)

Instructions

  1. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 3-4 minutes.
  2. Stir in garlic, cumin, and chili powder. Cook until fragrant, about 1 minute.
  3. Add shredded chicken and coat with the spices.
  4. Pour in enchilada sauce and simmer for 2-3 minutes. Remove from heat and stir in chopped cilantro. Season with salt to taste. Let cool slightly.
  5. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. Make 4-inch circles of mozzarella on the parchment, spaced apart. Bake 5-7 minutes until golden and melted.
  7. Cool the cheese circles for 30 seconds so they’re pliable but not hard.
  8. Add a spoonful of chicken filling and a sprinkle of cheddar and Monterey jack cheese to one side of each circle.
  9. Carefully roll into taquitos and place seam-side down on the baking sheet.
  10. Return to the oven for 5-7 minutes until crispy. Serve hot with sour cream if desired.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • To reheat, bake at 350°F for 10 minutes or air fry at 370°F for 3-4 minutes to retain crispiness.
