- 1 can (13.5 oz) coconut milk
- 1/2 cup water
- 1/4 cup erythritol (or preferred sweetener)
- 1 tablespoon agar-agar powder
Instructions
- In a medium saucepan, combine the coconut milk, water, and erythritol. Mix well until the sweetener is dissolved.
- Sprinkle the agar-agar powder over the mixture and let it sit for about 5 minutes to bloom.
- Place the saucepan over low heat and stir continuously until the agar-agar is completely dissolved, about 5-7 minutes.
- Once dissolved, increase heat to medium and bring the mixture to a gentle simmer. Allow it to simmer for 2-3 minutes.
- Remove from heat and pour the mixture into molds or a shallow dish.
- Let the mixture cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until set.
- Once set, carefully remove the jelly from the molds and slice into desired shapes.
Notes
- Ensure the sweetener is completely dissolved before adding agar-agar.
