Ingredients

  • 1/2 cup water
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 tablespoon agar-agar powder

Instructions

  1. In a medium saucepan, combine the coconut milk, water, and erythritol. Mix well until the sweetener is dissolved.
  2. Sprinkle the agar-agar powder over the mixture and let it sit for about 5 minutes to bloom.
  3. Place the saucepan over low heat and stir continuously until the agar-agar is completely dissolved, about 5-7 minutes.
  4. Once dissolved, increase heat to medium and bring the mixture to a gentle simmer. Allow it to simmer for 2-3 minutes.
  5. Remove from heat and pour the mixture into molds or a shallow dish.
  6. Let the mixture cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until set.
  7. Once set, carefully remove the jelly from the molds and slice into desired shapes.
