  • 180g haloumi cheese, sliced into ½-inch pieces
  • 2 small red birdseye chillies, thinly sliced
  • 2 teaspoons drained baby capers
  • 1 teaspoon finely grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 80g mixed lettuce leaves

Instructions

  1. Drain the capers and pat them thoroughly dry with paper towels.
  2. Heat ½ tablespoon of olive oil in a small pan over medium-high heat. Add the capers and fry for 1-2 minutes until they bloom open and become crispy. Remove with a slotted spoon and place on a paper towel to drain.
  3. Slice the haloumi into even pieces about ½-inch thick. Heat the remaining 1 tablespoon of oil in a large non-stick frying pan over medium-high heat. Add the haloumi slices and cook for 1-2 minutes on each side until golden brown.
  4. In a small bowl, combine the sliced chillies, lemon juice, and lemon rind. Whisk together until well combined.
  5. Arrange the mixed lettuce leaves on a serving plate. Place the golden haloumi pieces on top. Drizzle with the lemon-chili dressing and sprinkle the fried capers over everything. Serve immediately while the haloumi is still warm and the capers crisp.
