Refreshing and easy to make, this dessert will cool you down!


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Mix until well combined.
  3. Press the mixture into the bottom and up the sides of a 9-inch pie dish to form the crust.
  4. Bake the crust in the preheated oven for 10 minutes, then remove from the oven and allow to cool.
  5. In another bowl, whisk together sweetened condensed milk, fresh lemon juice, and lemon zest until smooth.
  6. Pour the lemon mixture into the cooled crust, spreading it evenly.
  7. Refrigerate the pie for at least 2 hours, or until set.
  8. In a separate bowl, use an electric mixer to beat the heavy whipping cream and powdered sugar until stiff peaks form.
  9. Spread the whipped cream over the top of the pie before serving.
  10. Garnish with additional lemon zest or lemon slices if desired.
