Ingredients

  • 2 cups almond flour
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons erythritol sweetener
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup erythritol sweetener
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the almond flour, melted butter, and 3 tablespoons erythritol sweetener. Mix until well combined and crumbly.
  3. Press the almond flour mixture evenly into the bottom of a greased 9-inch springform pan to form the crust.
  4. Bake the crust in the preheated oven for 10-12 minutes until lightly golden. Remove from the oven and let it cool.
  5. In a large bowl, beat the softened cream cheese until smooth.
  6. Add the sour cream, 1 cup erythritol sweetener, fresh lemon juice, lemon zest, and vanilla extract. Beat until fully combined.
  7. Add the eggs one at a time, mixing until just combined after each addition.
  8. Pour the cheesecake filling over the cooled crust in the springform pan.
  9. Bake the cheesecake for 45-50 minutes or until the edges are set and the center is slightly jiggly.
  10. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for about an hour.
  11. Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.
  12. Serve chilled and enjoy!
