Description

Lighter Broccoli Beef is a healthy and delicious dish that’s easy to make at home, featuring tender beef and vibrant broccoli.

Ingredients

Scale
  • 1 lb flank steak, thinly sliced
  • 2 cups broccoli florets
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or quinoa for serving

Instructions

  1. In a bowl, combine the sliced flank steak with soy sauce and cornstarch. Mix well and let it marinate for about 15 minutes.
  2. While the beef is marinating, prepare the broccoli by blanching it in boiling water for 2 minutes, then transferring it to an ice bath.
  3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
  4. Add the marinated beef to the skillet and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
  5. In the same skillet, add the remaining olive oil, minced garlic, and grated ginger. Sauté for about 30 seconds until fragrant.
  6. Add the blanched broccoli to the skillet and stir-fry for 2-3 minutes until tender but crisp.
  7. Return the beef to the skillet, add sesame oil, and toss everything together. Season with salt and pepper to taste.
  8. Cook for an additional 2 minutes to heat everything through.
  9. Serve the broccoli beef over cooked rice or quinoa.
