- 1 lb flank steak, thinly sliced
- 2 cups broccoli florets
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked rice or quinoa for serving
Instructions
- In a bowl, combine the sliced flank steak with soy sauce and cornstarch. Mix well and let it marinate for about 15 minutes.
- While the beef is marinating, prepare the broccoli by blanching it in boiling water for 2 minutes, then transferring it to an ice bath.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
- Add the marinated beef to the skillet and stir-fry for 3-4 minutes until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the remaining olive oil, minced garlic, and grated ginger. Sauté for about 30 seconds until fragrant.
- Add the blanched broccoli to the skillet and stir-fry for 2-3 minutes until tender but crisp.
- Return the beef to the skillet, add sesame oil, and toss everything together. Season with salt and pepper to taste.
- Cook for an additional 2 minutes to heat everything through.
- Serve the broccoli beef over cooked rice or quinoa.
Notes
- For a gluten-free option, use tamari instead of soy sauce.
- Add more vegetables like bell peppers or carrots for extra color and nutrition.
