- 1 pound ground beef
- 2 large potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/2 cup milk
- 1/4 cup chopped green onions
- 1/4 cup ketchup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, boil the diced potatoes for about 10-12 minutes until tender. Drain and mash the potatoes with milk, seasoning with salt and pepper to taste.
- In a mixing bowl, combine ground beef, breadcrumbs, half of the shredded cheddar cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.
- Form the meat mixture into a loaf shape and place it in a greased baking dish.
- Spread the mashed potatoes evenly on top of the meatloaf.
- Drizzle ketchup over the mashed potatoes and top with the remaining cheddar cheese.
- Bake in the preheated oven for 45-55 minutes, or until the meatloaf is cooked through and the cheese is bubbly and golden.
- Remove from the oven and let it rest for about 10 minutes before slicing.

- Ensure the meatloaf is fully cooked by checking the internal temperature reaches 160°F (70°C).
