Description

A hearty and comforting dish combining ground beef and seasoned mashed potatoes, topped with cheese and ketchup.


Ingredients

  • 1 pound ground beef
  • 2 large potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1/4 cup chopped green onions
  • 1/4 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the diced potatoes for about 10-12 minutes until tender. Drain and mash the potatoes with milk, seasoning with salt and pepper to taste.
  3. In a mixing bowl, combine ground beef, breadcrumbs, half of the shredded cheddar cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.
  4. Form the meat mixture into a loaf shape and place it in a greased baking dish.
  5. Spread the mashed potatoes evenly on top of the meatloaf.
  6. Drizzle ketchup over the mashed potatoes and top with the remaining cheddar cheese.
  7. Bake in the preheated oven for 45-55 minutes, or until the meatloaf is cooked through and the cheese is bubbly and golden.
  8. Remove from the oven and let it rest for about 10 minutes before slicing.
