- 1 cup grated carrots
- 1/2 cup erythritol or preferred sweetener
- 3 large eggs
- 1/3 cup melted unsalted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large mixing bowl, combine almond flour and erythritol. Stir well to ensure even distribution.
- Add the grated carrots to the mixture and mix until fully incorporated.
- In a separate bowl, whisk together the eggs and melted butter. Add vanilla extract and mix until smooth.
- Gradually pour the wet mixture into the dry ingredients and mix until you obtain a batter.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
