- ¾ cup xylitol
- 1 tsp pure liquid stevia
- 1¼ cups fine-ground almond flour
- ½ cup coconut flour
- 4 large eggs
- 2 tsp baking powder
- ½ tsp orange extract
- ½ tsp almond extract
- ⅛ tsp salt
- ¼ cup powdered xylitol
- ¼ tsp almond extract
- 1 tsp orange extract
- 1 tbsp unsweetened almond milk
- ¼ cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- Cream together the softened butter, xylitol, and liquid stevia until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in the orange and almond extracts.
- Whisk together the almond flour, coconut flour, baking powder, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
- Prepare the glaze by mixing the powdered xylitol, almond extract, orange extract, and almond milk.
- Once the cake has cooled, pour the glaze over the top and sprinkle with sliced almonds.
- Allow the glaze to set for about 15 minutes before cutting into 16 bars.
Notes
- For extra orange flavor, add 1 tablespoon of fresh orange zest to the batter.
- Ensure all ingredients are at room temperature for better mixing and baking.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
