  • ¾ cup xylitol
  • 1 tsp pure liquid stevia
  • 1¼ cups fine-ground almond flour
  • ½ cup coconut flour
  • 4 large eggs
  • 2 tsp baking powder
  • ½ tsp orange extract
  • ½ tsp almond extract
  • ⅛ tsp salt
  • ¼ cup powdered xylitol
  • ¼ tsp almond extract
  • 1 tsp orange extract
  • 1 tbsp unsweetened almond milk
  • ¼ cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. Cream together the softened butter, xylitol, and liquid stevia until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in the orange and almond extracts.
  4. Whisk together the almond flour, coconut flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
  9. Prepare the glaze by mixing the powdered xylitol, almond extract, orange extract, and almond milk.
  10. Once the cake has cooled, pour the glaze over the top and sprinkle with sliced almonds.
  11. Allow the glaze to set for about 15 minutes before cutting into 16 bars.
