Ingredients

  • 1 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • 1/2 cup pepperoni slices
  • 1/4 cup marinara sauce (for dipping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine the shredded mozzarella cheese and almond flour. Microwave for 1 minute, then stir well.
  3. Add the egg and Italian seasoning to the bowl, mixing until a dough forms.
  4. Place the dough onto a piece of parchment paper and flatten it into a rectangle shape, approximately 1/4 inch thick.
  5. Evenly distribute the pepperoni slices over the dough.
  6. Roll the dough tightly from one end to the other, creating a log shape.
  7. Cut the roll into 1-inch pieces and place them on the prepared baking sheet.
  8. Bake in the preheated oven for 12-15 minutes or until golden and crispy.
  9. Allow the pizza rolls to cool for a few minutes before serving with marinara sauce.
