- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 bell peppers, chopped
- 2 garlic cloves, minced
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 4 large eggs
- Fresh parsley, chopped for garnish
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and bell peppers to the skillet and sauté until they are softened, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the diced tomatoes, ground cumin, paprika, salt, and pepper. Stir well to combine.
- Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld together.
- Make four small wells in the tomato mixture and crack one egg into each well.
- Cover the skillet and cook for about 5-8 minutes, or until the eggs are set to your liking.
- Remove from heat, garnish with freshly chopped parsley, and serve warm.
