  • 1 large salmon fillet (about 2 1/4 lb.) – wild caught preferred for best flavor
  • 3/4 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 cup mayonnaise (Greek yogurt can be substituted for a lighter version)
  • 1 1/2 cups crumbled feta (about 7 oz.)
  • 1/4 cup chopped fresh parsley
  • 2 Tbsp. chopped fresh dill
  • 1 tsp. finely grated lemon zest
  • 1 clove garlic, finely chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil and lightly coat with cooking spray.
  2. Place the salmon fillet skin-side down on the prepared baking sheet. Season evenly with kosher salt and freshly ground black pepper.
  3. Spread the mayonnaise in a thin, even layer over the top of the salmon.
  4. In a medium bowl, combine the crumbled feta, chopped parsley, dill, lemon zest, and garlic. Mix gently until well combined.
  5. Carefully press the feta-herb mixture onto the mayonnaise-covered salmon, ensuring it adheres well.
  6. Bake in the preheated oven for 15-20 minutes, until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove from the oven and let the salmon rest for 5 minutes before serving.
