- 2 cans of tuna in water, drained
- 1 cup of cauliflower florets
- 1 cup of heavy cream
- 1 cup of shredded cheese (cheddar or mozzarella)
- 1/2 cup of diced onion
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1/2 cup of frozen peas (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent.
- Add the cauliflower florets to the pot and cook for about 5 minutes, stirring occasionally until they start to soften.
- Pour in the heavy cream and stir to combine. Bring the mixture to a simmer.
- Add the drained tuna, shredded cheese, dried thyme, salt, and pepper. Stir until the cheese is melted and everything is well combined.
- If using, add the frozen peas and cook for an additional 3-4 minutes until they are heated through.
- Remove the pot from heat and let it cool for a couple of minutes before serving.
