Description

One Pot Keto Tuna Casserole is an easy, comforting dish that’s perfect for a quick weeknight dinner. The creamy tuna and cauliflower mixture is not only satisfying but also keeps it low on carbohydrates, aligning perfectly with keto dietary needs.


Ingredients

  • 2 cans of tuna in water, drained
  • 1 cup of cauliflower florets
  • 1 cup of heavy cream
  • 1 cup of shredded cheese (cheddar or mozzarella)
  • 1/2 cup of diced onion
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • 1/2 cup of frozen peas (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent.
  2. Add the cauliflower florets to the pot and cook for about 5 minutes, stirring occasionally until they start to soften.
  3. Pour in the heavy cream and stir to combine. Bring the mixture to a simmer.
  4. Add the drained tuna, shredded cheese, dried thyme, salt, and pepper. Stir until the cheese is melted and everything is well combined.
  5. If using, add the frozen peas and cook for an additional 3-4 minutes until they are heated through.
  6. Remove the pot from heat and let it cool for a couple of minutes before serving.
