- 1 large English cucumber, diced
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1 cup kalamata olives, pitted
- 6 oz feta cheese, cubed (about 3/4 cup)
- Optional: 1 cup chickpeas, drained and rinsed
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
- 1/4 cup high-quality extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon honey (optional)
- Salt and freshly ground black pepper, to taste
Instructions
- Wash and prepare all vegetables: dice the cucumber and bell pepper, halve the cherry tomatoes, and thinly slice the red onion.
- Chop fresh herbs: parsley, mint, and oregano.
- In a small bowl, whisk together the dressing ingredients: olive oil, lemon juice, garlic, mustard, honey (if using), salt, and pepper.
- In a large mixing bowl, combine the cucumber, tomatoes, bell pepper, red onion, olives, and chickpeas (if using).
- Add the fresh herbs and most of the dressing, then toss gently to coat.
- Carefully fold in the cubed feta. Drizzle with the remaining dressing before serving.
Notes
- To reduce the sharpness of red onion, soak the slices in ice water for 10 minutes before adding them to the salad.
- Use high-quality olive oil and authentic Greek feta for the best flavor.
