Instructions
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- Separate the egg whites from the yolks. Place each yolk in an individual small bowl, keeping them intact. Put all the egg whites in a large, clean mixing bowl.
- Ensure your mixing bowl for the egg whites is completely clean and dry – any grease will prevent them from whipping properly.
- Add a pinch of salt to the egg whites and beat them with an electric mixer on high speed until stiff peaks form (about 2-3 minutes).
- Gently fold in the grated Parmesan cheese and chopped scallions using a spatula.
- Spoon the whipped egg white mixture onto the prepared baking sheet, creating 4 even mounds with a slight well in the center of each.
- Carefully slide a yolk into the center of each cloud.
- Bake in the preheated oven for 3 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 2-3 minutes.
- Remove from the oven and sprinkle with freshly ground pepper.
- Serve immediately for the best texture and appearance.
