Instructions

  1. Preheat your oven to 400°F (200°C). Pat the salmon dry with paper towels and season with salt and pepper. Carefully wrap each piece of salmon with prosciutto slices, ensuring the fish is completely covered.
  2. Heat half of the butter (2 tablespoons) and olive oil in an oven-safe skillet over medium-high heat. When the butter is melted, add the prosciutto-wrapped salmon, seam side down. Sear for 2-3 minutes until the prosciutto begins to crisp. Flip the salmon and transfer the skillet to the preheated oven. Bake for 7-10 minutes, depending on the thickness of your salmon.
  3. While the salmon bakes, prepare your sauce in a separate pan. Add the remaining butter (2 tablespoons) to a small saucepan over medium heat. Cook the butter, swirling occasionally, until it turns golden brown and smells nutty (about 3-4 minutes). Immediately add the slivered almonds and minced garlic to the browned butter. Cook for another minute until the almonds are lightly toasted and the garlic is fragrant. Season with a pinch of salt and pepper to taste.
  4. Remove the baked salmon from the oven. Transfer to serving plates and generously spoon the brown butter almond sauce over each piece of salmon. Serve immediately while hot.
