Spicy Pork and Brussels Sprouts Bowls

Description

A flavorful dish combining ground pork and Brussels sprouts, dressed in a spicy soy sauce mixture.


Ingredients

  • 1 pound ground pork
  • 2 cups Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • 2 green onions, sliced for garnish

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the ground pork to the skillet and cook until browned, breaking it apart as it cooks, about 5-7 minutes.
  3. While the pork is cooking, in a separate bowl, whisk together the soy sauce, sriracha, garlic, ginger, salt, and pepper.
  4. Once the pork is browned, pour the sauce mixture over the pork and stir to combine. Cook for another 2-3 minutes.
  5. Remove the pork from the skillet and set aside.
  6. In the same skillet, add the remaining tablespoon of olive oil and add the halved Brussels sprouts cut-side down. Cook for about 5 minutes without stirring until they are golden brown.
  7. Stir the Brussels sprouts and cook for an additional 5 minutes until tender and caramelized.
  8. Return the cooked pork to the skillet and toss together with the Brussels sprouts for another minute to heat through.
  9. Serve in bowls, garnished with sliced green onions.

Notes

  • Feel free to adjust the spiciness by modifying the amount of sriracha.
  • This dish can be served over rice or quinoa for a more filling meal.
