  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 1/2 heaping cup strawberry preserves, chilled overnight

Instructions

  1. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. In a large mixing bowl, combine the melted and cooled butter with granulated sugar. Whisk vigorously for about 1 minute until the mixture becomes lighter in color and slightly fluffy.
  3. Add the egg, egg yolk, and vanilla extract to your butter-sugar mixture. Mix until fully incorporated and smooth.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula until just combined. Be careful not to overmix.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes, or up to 24 hours for the best flavor development.
  6. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Remove the chilled dough and strawberry preserves from the refrigerator. Scoop about 2 tablespoons of dough and roll into a ball.
  8. Make an indentation in the center of each ball with your thumb, creating a well for the jam.
  9. Fill each indentation with 1/2 teaspoon of the chilled strawberry preserves. Avoid overfilling to prevent jam from spilling over during baking.
  10. Arrange cookies on the prepared baking sheets, spacing them about 2 inches apart.
  11. Bake for 10-12 minutes, or until the edges are set and just beginning to turn golden. The centers will still look slightly undercooked.
  12. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
