- 3/4 tsp kosher salt
- 1 cup (225g) unsalted butter, melted and cooled
- 1 1/4 cup (225g) granulated sugar
- 1 large egg + 1 egg yolk
- 2 tsp vanilla extract
- 1/2 heaping cup strawberry preserves, chilled overnight
Instructions
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, combine the melted and cooled butter with granulated sugar. Whisk vigorously for about 1 minute until the mixture becomes lighter in color and slightly fluffy.
- Add the egg, egg yolk, and vanilla extract to your butter-sugar mixture. Mix until fully incorporated and smooth.
- Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula until just combined. Be careful not to overmix.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes, or up to 24 hours for the best flavor development.
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Remove the chilled dough and strawberry preserves from the refrigerator. Scoop about 2 tablespoons of dough and roll into a ball.
- Make an indentation in the center of each ball with your thumb, creating a well for the jam.
- Fill each indentation with 1/2 teaspoon of the chilled strawberry preserves. Avoid overfilling to prevent jam from spilling over during baking.
- Arrange cookies on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and just beginning to turn golden. The centers will still look slightly undercooked.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
