- 1 cup cream cheese, softened
- 1/4 cup erythritol or preferred sweetener
- 1 teaspoon cinnamon
- 4 large eggs
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the softened cream cheese, erythritol, and cinnamon. Mix well until smooth and creamy.
- In another bowl, whisk together the eggs, almond flour, baking powder, vanilla extract, and salt until well combined.
- Pour the egg mixture onto the prepared baking sheet. Spread it out evenly to form a thin layer.
- Bake in the preheated oven for about 12-15 minutes or until the edges are slightly golden.
- Once baked, remove from the oven and let it cool for 5 minutes.
- Carefully peel off the parchment paper from the bottom of the baked layer.
- Spread the cream cheese mixture evenly over the baked layer.
- Starting from one edge, carefully roll the mixture into a tight log.
- Slice the rolled-up dessert into even pieces and serve warm or chilled.
