- ⅓ cup / 50g coconut flour
- ⅓ cup / 75g butter or coconut oil, softened (use coconut oil for dairy-free version)
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons granulated sweetener (or more to taste – I used a brown sugar substitute)
- 1 egg (optional for egg wash)
- 1 tablespoon milk of your choice or cream (optional for egg wash)
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the softened butter or coconut oil with your chosen sweetener. Mix until smooth and creamy.
- Add the eggs and vanilla extract to the butter mixture. Beat until well incorporated and slightly fluffy.
- Gradually add the coconut flour to the wet ingredients, stirring until a cohesive dough forms.
- Allow the dough to rest for 5 minutes to let the coconut flour fully absorb the liquid.
- Using a tablespoon, scoop portions of dough and roll into balls. Place them on your prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball with the palm of your hand or the bottom of a glass to your desired thickness (about ½ inch thick works well).
- For a golden finish, brush the optional egg wash over the tops of the cookies.
- Bake for 10-12 minutes until the edges are just turning golden brown.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- When baking with coconut flour for keto dieters, remember that it’s extremely absorbent. Don’t be tempted to add more than the recipe calls for.
- Add flavor variations such as unsweetened cocoa powder, cinnamon, nutmeg, lemon zest, or sugar-free chocolate chips for variety.
- To restore the fresh-baked texture, warm refrigerated or frozen cookies in a 300°F oven for 3-5 minutes.
