Delicious and easy-to-make keto coconut flour cookies with a satisfyingly sweet and chewy texture, perfect for a low-carb lifestyle.


Ingredients

  • ⅓ cup / 50g coconut flour
  • ⅓ cup / 75g butter or coconut oil, softened (use coconut oil for dairy-free version)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons granulated sweetener (or more to taste – I used a brown sugar substitute)
  • 1 egg (optional for egg wash)
  • 1 tablespoon milk of your choice or cream (optional for egg wash)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the softened butter or coconut oil with your chosen sweetener. Mix until smooth and creamy.
  3. Add the eggs and vanilla extract to the butter mixture. Beat until well incorporated and slightly fluffy.
  4. Gradually add the coconut flour to the wet ingredients, stirring until a cohesive dough forms.
  5. Allow the dough to rest for 5 minutes to let the coconut flour fully absorb the liquid.
  6. Using a tablespoon, scoop portions of dough and roll into balls. Place them on your prepared baking sheet, spacing them about 2 inches apart.
  7. Gently flatten each ball with the palm of your hand or the bottom of a glass to your desired thickness (about ½ inch thick works well).
  8. For a golden finish, brush the optional egg wash over the tops of the cookies.
  9. Bake for 10-12 minutes until the edges are just turning golden brown.
  10. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • When baking with coconut flour for keto dieters, remember that it’s extremely absorbent. Don’t be tempted to add more than the recipe calls for.
  • Add flavor variations such as unsweetened cocoa powder, cinnamon, nutmeg, lemon zest, or sugar-free chocolate chips for variety.
  • To restore the fresh-baked texture, warm refrigerated or frozen cookies in a 300°F oven for 3-5 minutes.
