- 1/2 cup unsweetened peanut butter
- 1/4 cup erythritol or your preferred low-carb sweetener
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, erythritol, and salt.
- Add peanut butter, vanilla extract, and baking powder to the dry ingredients.
- Mix the ingredients thoroughly until a dough forms. If necessary, use your hands to incorporate fully.
- Roll the dough into small balls, about 1-inch in size, and place them on the prepared baking sheet.
- Flatten each ball slightly with a fork, creating a crisscross pattern on the top.
- Bake in the preheated oven for 10-12 minutes, or until the edges start to turn golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
