Instructions
- Begin by heating oil in a deep frying pan or a deep fryer over medium-high heat until it reaches 350°F (175°C).
- In a bowl, combine the gluten-free flour, baking powder, salt, and black pepper. Whisk together until well mixed.
- Gradually add the sparkling water to the dry ingredients, whisking until a smooth batter forms. The batter should be light and airy; adjust the consistency with more sparkling water if needed.
- Pat the fish fillets dry with paper towels to remove excess moisture. This will help the batter adhere better.
- Dip each fillet into the batter, allowing any excess to drip off. Ensure that the fish is evenly coated.
- Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-6 minutes on each side, or until the fish is golden brown and cooked through.
- Once cooked, remove the fish from the oil and place it on a plate lined with paper towels to absorb any excess oil.
