A delicious and easy recipe for stuffed chicken breasts filled with creamy spinach and cheese.

- 2 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- ½ cup cream cheese, softened
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach and softened cream cheese until well mixed.
- Carefully cut a pocket into each chicken breast without slicing all the way through.
- Stuff each chicken breast pocket with the spinach and cream cheese mixture.
- Season the outside of the chicken breasts with salt, pepper, and any other desired spices.
- Heat a skillet over medium-high heat and add a small amount of olive oil.
- Sear each stuffed chicken breast in the skillet for about 4 minutes on each side, or until golden brown.
- Transfer the seared chicken breasts to a baking dish and cover with foil.
- Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from oven, let rest for 5 minutes, and serve warm.
Notes
- Make sure not to cut through the chicken breast when creating the pocket.
- You can add herbs or spices to the stuffing for extra flavor.
- This dish pairs well with a side salad or roasted vegetables.
