Description

A delicious and easy recipe for stuffed chicken breasts filled with creamy spinach and cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • ½ cup cream cheese, softened

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach and softened cream cheese until well mixed.
  3. Carefully cut a pocket into each chicken breast without slicing all the way through.
  4. Stuff each chicken breast pocket with the spinach and cream cheese mixture.
  5. Season the outside of the chicken breasts with salt, pepper, and any other desired spices.
  6. Heat a skillet over medium-high heat and add a small amount of olive oil.
  7. Sear each stuffed chicken breast in the skillet for about 4 minutes on each side, or until golden brown.
  8. Transfer the seared chicken breasts to a baking dish and cover with foil.
  9. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  10. Remove from oven, let rest for 5 minutes, and serve warm.

Notes

  • Make sure not to cut through the chicken breast when creating the pocket.
  • You can add herbs or spices to the stuffing for extra flavor.
  • This dish pairs well with a side salad or roasted vegetables.
