Description
Tuscan Butter Shrimp is a creamy, rich one-pan Italian seafood dish that comes together in under 30 minutes. This dish combines shrimp, spinach, and tomatoes in a luxurious sauce that’s easy to prepare.

- 2 Tbsp. extra-virgin olive oil
- 1 lb. shrimp, peeled, deveined, and tails removed
- Kosher salt
- Freshly ground black pepper
- 3 Tbsp. butter
- 3 cloves garlic, minced
- 1 1/2 cups halved cherry tomatoes
- 3 cups baby spinach
- 1/2 cup heavy cream
- 1/4 cup freshly grated Parmesan
- 1/4 cup basil, thinly sliced
- Lemon wedges, for serving (optional)
Instructions
- Pat shrimp dry with paper towels. Season generously with kosher salt and freshly ground black pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering.
- Add shrimp to the hot pan in a single layer. Cook for 2 minutes per side until pink and opaque. Remove shrimp to a plate and set aside.
- In the same skillet, reduce heat to medium and add 3 tablespoons of butter.
- Once butter is melted, add minced garlic and cook for 30 seconds until fragrant, stirring constantly to prevent burning.
- Add cherry tomatoes to the pan and cook for 2-3 minutes until they begin to burst and release their juices.
- Add spinach to the pan and stir until wilted, about 1-2 minutes.
- Pour in heavy cream, stirring to combine. Bring mixture to a gentle simmer.
- Stir in Parmesan cheese until melted and sauce begins to thicken slightly, about 2 minutes.
- Return shrimp to the pan and gently toss to coat in the sauce. Allow to warm through for 1-2 minutes.
- Remove from heat and stir in fresh basil. Adjust seasoning with salt and pepper if needed.
Notes
- Shrimp Secret: Do not overcook the shrimp to prevent it from becoming tough and rubbery.
- Sauce Consistency: If the sauce becomes too thick, add a splash of chicken broth to thin it to your desired consistency.
- For extra depth of flavor, deglaze the pan with 1/4 cup of white wine after cooking the garlic and before adding the tomatoes.
- Dairy-Free Option: Use coconut cream instead of heavy cream and nutritional yeast instead of Parmesan.
